Abstrak

This study analyzes the trends of buffet seblak businesses in Bengkulu City, focusing on the factors influencing their popularity and impact on the local culinary industry. Buffet seblak, a traditional Sundanese dish made from crackers and spicy seasonings, has gained popularity through a buffet concept that offers flexibility in choosing toppings and spice levels. A qualitative descriptive research method was employed through a case study at Kedai Kito, utilizing in-depth interviews and questionnaires. Findings reveal that buffet seblak is highly favored by the younger generation due to its flexibility and distinctive flavor. Social media proved effective in promotion, despite challenges such as maintaining ingredient quality and intense competition. In conclusion, buffet seblak holds significant potential for further growth through continuous innovation and smart marketing strategies, positioning it as a vital component in Bengkulu's modern culinary scene.
